Oatmeal Pancakes

I have a massive sweet tooth, especially when it comes to breakfast options. Making sure I don't consume sugar or white flour (maida) I wanted to make my own version of the oatmeal pancakes! The recipe isn't something radically different from the ones you have seen over the internet, but I can assure you it's one of the simplest & quickest to make!

The following recipe makes 6-8 pancakes and it takes about 15-20 min to make if we skip the rest time


Ingredients

Pancake batter

  • Rolled oats - 2.5 cups (or if you have oat flour then 2 cups)

  • Buttermilk or milk or soy milk - 250 ml (try to use whole fat butter milk)

  • Eggs - 2/3 (2 large or 3 medium sized)

  • Protein powder - 3 heaped tbsp (preferrable if it has a flavour to add sweetness)

  • Unsweetened cocoa powder - 2 tbsp

  • Neutral oil - 4 tbsp

  • Bananas - 2 medium sized

  • baking soda - 1 tsp

  • salt - a pinch

Toppings

  • Peanut butter - 2 tbsp

  • honey/maple syrup/ dates syrup

  • chocochips/dry fruits

  • fruits of your choice like banana/strawberry/blueberry


Recipe

  • Ground 2 cups of oats in a mixer grinder

  • In a large bowl mix together the ground oats, baking soda, salt, protein powder, cocoa powder

  • Mash the bananas

  • Add the buttermilk/milk and crack the eggs along with the oil and mashed bananas

  • Mix the batter until it is just combined (try to not overmix as it makes the pancakes dense)

  • Take the left over 0.5 cup of rolled oats and fold it into the batter gently

  • Now if you like a stuffed pancake, you can add chocochips or any fruits like strawberry/banana in the batter and gently fold it

  • Let the batter rest for 15-20 min, you can skip this step but resting the batter helps the pancakes be moist and fluffy

  • On a non stick pan add a tsp of oil or butter and let it heat up on medium flame

  • Now lower the flame and take a scoop of batter and spread it on top of the pan

  • cook on each side for about 3-5 min (indicator: when you see bubble form on one side, keep it on for 2 min more before flipping it)

  • Stack up the pancakes and add a tbsp of peanut butter on top, drizzle some syrup of your choice, and top it with some fresh fruits!
